One group I am in runs a pancake breakfast every month at the airport.  It takes place in one of the member's hangar.  You need tables and chairs, hangar to put them in is nice, a gas BBQ grill works fine for cooking the pancakes.  We also cook sausages.  Get some syrup, coffee and orange juice, and you should be good to go.

Your real issue will be size - how many people will you be serving.  Hard to tell until you do it so make sure you don't put so much food out at once that you have wastage.  Should be able to freeze the stuff you haven't cooked or served (sausages and OJ).
