I looked and am surprised I didn't find a thread on this topic.
I have a member who literally has a single task that needs signing off to achieve GTM-3 - Task O-0702 (Use a signal mirror). While still in Phase 0, I was thinking, why couldn't he a) watch a video on how to use a signal mirror, then b) record himself accomplishing the task to standard and provide the SET qualified person the video?
I cannot find a reason in my critically thinking brain housing group as to why this couldn't
Believe it or not, this 1943 video lesson (https://youtu.be/vmnRrCVBaP0) on how to actually use a signal mirror is the best I've ever seen, especially since I use (and strongly recommend) the MIL-M-18371E Mark 3 Emergency Signalling Mirror (https://www.bestglide.com/military-glass-signal-mirror.html).

Absolutely, do it.
Demonstrate Individual performance to standard.
You may choose, at your discretion as SET, to hold to a stricter more literal reading of the standard for an initial qual, where for requals of a long experienced member, walking through it verbally (tabletop) may be appropriate in situations like we face currently (e.g. not a lot of "control the lines" and "working with dog teams" going on right now).

The SET decides when the task has been accomplished properly.
Yes. We have been doing this for sUAS when needed. So many things can be done virtually, using video demonstrations of abilities.
Addendum, re: a corner case.
Just as it would never be appropriate to sign off a roster of people on a task after giving a class, it is equally not proper to brief a SQTR task over a video call and then sign off everyone on the call.
I mention this only because every now and then we see someone with SET permissions who does a mass sign off after giving a class, without individual-level evaluations. Which has led me to suspend their SET quals, sadly, until we get square with that SET designee on doing this right by the numbers. Do the training, en masse if needed, via video if needed, and do individual evaluations to the standard, via video at your discretion.

Dittos. Thats what we've done. The videos are individual members demonstrating the tasks. Recorded and then sent for eval. The SET and/or Check Pilot can then contact the member with any additional questions or request more info, before any approvals.
I have to add, very cool video and does give proper instruction on a signal mirror.
