I've been an ESO for about a year now. In fact, I'm eligable for my ES badge at the end of this month. What I'm asking about is what are some good ES courses I can give? I've already taught almost all the tasks on the GTM3 SQTR, as well as almost all of the tasks on the MRO SQTR. What else can I do? I'm starting to get to my wits end.
Keep teaching up the GT SQTRs. Lots of tasks left in GTM1/2 or UDF

The SQTR items are a great place to start. I can agree with the topics above too.
We also did dog training with a dog team.
I taught exercise planning to the more advanced folks.
Taught TTT back in the day (I was one of two Cadet CTTTs in the wing. THAT was a long course). Taught SET after that, instead of just having them take the test.
An awesome gear class is always great. I had an awesome UDFT individual equipment class that I taught that was refined over years of input and experience.
Great ideas. I've taught GES, but I can't get them to take the test. Isn't there a way I can enter it online to where they don't have to take the test, or is the test mandatory?
Must take the test. I am not sure, but the written test should still be able to be requested.
Teach NASAR stuff, get SARTEC II certified.
Get with outside agencies. Contact your local Flight For Life org. They like talking to other organizations, esp. with youth. Heck, if you have the space, they may even bring a helicopter in and instruct on how to prep an LZ for them. It's a fun and interesting way to get a GTL task signed off.
See if your local fire dept. offers live fire extinguisher training. Everybody loves fire.
Suggestion #1 Don't under any circumstances try to teach all the classes yourself, you will both burn yourself out and bore the cadets because eventually your classes will not change.
So, work with Red Cross and do First aid, CPR, Disaster Relief Courses, etc.
Get with the local FD or EMA and arrange some of the ICS courses.
Teach GES, and work on the SQTR's
When I was an ESO I tried to focus on things that the members are not going to learn on a mission, or at NESA or whatever. We would do the SQTR Stuff mostly on the weekends between missions.
I would also lean on cadets and seniors that were going for higher levels. It really did help people learn what they where doing when they had the pressure of teaching it.

You also should consider training everything on annual cycles, not just "we did that already".
I have units that do the entire aircrew cycle, MS/MO/MP once a year. Not only does everyone need recurrency training
for both muscle memory and to maintain qualifications, but you'll have new members, people focusing on different areas,
and people who missed classes the first time through.
An annual cycle of air and ground training keeps everyone fresh and helps them understand that its the trip, not the destination that's important.
You should also look into running self-funded missions at the unit level to help fulfill those requirements and get people hands on experience.
Borrowing the idea from what Eclipse said...have you taken the FEMA exercise planning course? You should do that yourself.
