Problem is, with a few exceptions, the best that a SM can hope for is a position as a TAC.
With that in Mind, Id say NESA or MAS

AFSCFC for me.  Either Colorado or California... Whichever is more about ICBMs.  Have heard Florida is more space and much less missiles.  Have also toyed with MAS in the past, but I dunno.

Should have tried for COS WIWAC... Another cadet from my old unit went and people apparently thought I was going too.

I'll be setting up the AFSCFC in CA and I'm an ICBM guy so there's going to be there will be plenty of ICBM stuff.  ;D
The CO activity spends a day at FE Warren so there is ICBM exposure there, but there's a chance the activity will be cancelled.

CAP Producer

Not an NCSA persay but the National PAO Academy last year was probably the most worthwhile CAP event I have been to yet.

The chance to collaborate with many of my colleagues, the National PA team and learn from some outstanding PA practicioners was definately worth it and I will be going back next year.

I'm applying to go back to NBB. I figure since this is my last summer as a cadet, I might as well just have fun with it and do something I enjoyed last time.

I had actually thought about saying the same thing last night, but didn't.  Now that you said it, lordmonar...

Seriously, if there is an "advanced" course to follow a "basic" course, then by all means, go.  i.e. PJOC one year followed by Advanced PJOC the next...  But I've heard of cadets going to NESA 5, 6 even 7 times, just to be on staff.  Again, it'd be one thing if they did GTM, GTL, then maybe went observe, but there are a ton of NSCA's out there, expand your horizons.

I attended my fair share of NCSA and it's really hard to compare them because they are all so different. 

I had to vote for IACE though.  Who wouldn't want to go to a foreign country for a 2weeks for a few hundred bucks?

Seriously though; Id like to ask, aside from being a TAC, how involved, activity wise, can a SM be at a NCSA?  (MAS, NESA excluded)

MAS and AFSCFC sound like winners to me.

NCSAs, with a few exceptions, exist for cadets. A senior is there in a support role not to be an active participant.  If a senior gets to participate in the "gee whiz" great but don't expect it that isn't why they are there.

I understand fully, thats kinda the point...
We have discussed this before but I say there ought to be National Activities for Seniors. ( I know about SLS/CLC/RSC/NSC etc)
