Title: Glass cockpit instrumentation/data recording capabilities?

Do the glass-cockpit equipped aircraft log any data (throttle angle, engine RPM, altitude, airspeed, etc.)?

The glass is just a display. You would need a Flight Data Recorder to record the stuff.

Are Flight Data Recorders standard equipment on CAP aircraft?

No, FDRs are not standard equipment on CAP aircraft and are rare on general aviation aircraft.

The Avidyne Entegra "Integrated Flight Deck System," a "glass cockpit" system available on aircraft from Cirrus, Piper and several other manufacturers does include a recording system.  "The [engine monitoring] system also monitors and alerts for engine exceedences and records any exceedences as well as all other displayed engine data" (including parameter such as voltages and outside air temperature).  Up to 100 hours of data can be stored and downloaded via a USB cable or thumbdrive.

This is basically an Engine Monitoring System. A "real" Flight Recorder system, depending on how many channels it has, records stuff like airspeed, altitude, attitude, G Loads, flight control positions, trim positions, landing gear position.
Some of the systems used on commercial airliners record up to 100 separate measurements, and are downloadable through ACARS from the ground while still in flight..
