I just saw this linked from Wired- a set of instructions to build a small stand to allow a smartphone to be used as a microscope (and able to take pictures and video). It's not quite aerospace education, but definitely worth a look for some AE officers in CAP wanting to keep up with some new STEM topics for the cadets:
