But my opinion aside, how easy/hard are they to cook?

Not hard at all. I was the same way until I had a turducken one year. They taste great but they are small so you dong get as many left over sandwiches....

Or, if you're Howard Walowitz, you have a Tur-Brisk-a-fil. A turkey, stuffed with a brisket, stuffed with gefelte fish.
